"Mock Justin's Peanut Butter Cups"



Mock- "Justins" Peanut Butter Cups" 

gluten,dairy,soy,and egg free. Plus non-gmo and organic! ( Easy Recipe) 

I LOVE chocolate...and I LOVE nut butters! Who doesn't? Can I get an amen?!  I used to down Reese's peanut butter cups like nobodies business until I had to cut out gluten,dairy and soy for the little miss. Not to mention discovering how bad they really are for you! ( Seriously..these are way better. DITCH those cups!) That's when I discovered the wonderful world of Justin's Dark Chocolate Peanut-butter cups! They are like heaven and taste a million times better then Reeses( check them out here http://justins.com/item/dark-chocolate-peanut-butter-cup-single/.)
Needless to say I became a TAD addicted....ok REALLY addicted. One night after downing about 4 in a row ( don't judge me), I realized I could probably make something similar for a lot cheaper and a little healthier. I was also trying to incorporate more coconut oil in our diets so that's when my brilliant ( ha-ha, who am I kidding...more like chocolate addicted) mind came up with these bad boys! Super easy and super delicious! Not gonna' lie I ate all of them in one night....yeah, their that GOOD!
           
You will need: 
-Muffin Tin
-Large pot
-Heat safe bowl
-Measuring cups
-Whisk




           
Ingredients: 
- 6 Tbs Nut butter
(you can use what ever kind you'd like! I chose cashew this time)
- 1 cup Chocolate Chips of your choice
( I use Enjoy Life mini chips because they are gluten,dairy,soy and other allergen free! Plus non-gmo
-2 Tbs Organic Coconut Oil
( love this big one I scored from Costco!)

So, I start by measuring a cup of chocolate chips. Now you have a choice to either melt it all now, or just do about half and melt the rest in a bit. If you just want to reheat the chocolate for the second layer go ahead and dump them all in your heat safe bowl.



Then place your heat safe bowl in your pot and place on the stove over medium heat.  I then add my coconut oil..( 1 tbs if you divided your chocolate chips in half. If not dump all that goodness in.)



 Whisk together until melted into a chocolate sauce.

( PS: this mixture also makes amazing hard shell for frozen treats!)



Next your going to pour half the chocolate 
(all if you divided up your chips) into each muffin tin cup. You want to make just a thin layer for the bottom of your cups. Then place it in the freezer to set for about 10 mins or until firm.  


 

Once its firm I then take a dollop of nut butter ( this is really a preference thing, I didn't measure exact...Depends on how thick you want your nut butter layer to be...) and place it on top of the hardened chocolate, being careful to keep it in the middle and not cover the edges
( or else you will end up with more of a nut butter cup sandwich..which would still be good! ) and then place it back in the freezer.
...If you have not melted the rest of the chocolate, now is the time. Same way as before.


I then pour the rest of the chocolate (reheat if it has hardened) on top of the nut butter layer and back in the freezer it goes until they are hard ( around 20 mins) 




 That's it! Super easy and fast! I keep them in the freezer
until I am ready to eat them and pop them out with a butter knife. Because they are made with coconut oil they melt a little easier so keep a napkin close by...or just be ready to lick your fingers...

Being a Scentsy consultant is awesome...but being a consultant you experience quite a few things while working your business...

     Being a consultant for Scentsy has been amazing and has provided a way for my family to live our organic lifestyle.  My hubby works extremely hard to provide for our family while I stay at home to raise the sweet pea, but I love that scentsy has provided extra funds for date nights, diapers, and it has helped us maintain our "organic" lifestyle. Being a stay at home mom, is wonderful but sometimes you want something of your own, something you can put your effort into during those nap times ( when and if they happen..am I right ? ) and scentsy has provided just that  for me. Over the last year I have fallen more in love with the company and products and grown my business...I love doing parties and chatting with people and answering questions and comments...but with that comes some interesting thoughts, feelings, and actions only a scentsy consultant would understand...thought I would share some
(satirically of course, hehe!) 
You know your a scentsy consultant when.....


 -You graciously smile while someone is informing you that you have been sucked into a "Pyramid scheme."


... Well that "scheme" has provided a lot of diapers, date nights, organic treats and helps support my family...so I will gladly climb that "Pyramid"!

Honest Company Product Review

"The Honest Company Product Review"


    The honest company founded by Jessica Alba and Christopher Gavigan, believes in making products that are "unquestionably safe, eco friendly, beautiful convenient   and affordable." Each product is free of alcohol, chlorine, phthalates, formaldehyde, parabens, phenols, ammonium compounds, lanolin and unnecessary additives ( all these are commonly found in regular baby products and often cause reactions)  Their products are also all natural, organic, hypoallergenic and pediatrician tested.
Before I had my sweet baby girl, my sister had given me a "sample package " of the honest company products and diapers, and needless to say I loved them( cutest diapers EVER!)  and couldn't wait to try them out on my little cutie pie. Now that she has arrived I have discovered she has very sensitive skin. She is prone to diaper rash, eczema, and baby acne ( poor peach), and after reading more about the Honest Company I have dove into more of their products...
 I have  have used the diapers, wipes, lotions, body wash, and I am currently trying out the new diaper cream, soothing bum wash, and talc free baby powder... Have they helped? What is worth the money and what isn't? Read On dear mommas!
-I'm going to start with reviewing the diapers and wipes. So first off, cutest diapers ever, am I right? Seriously I love their designs! They keep adding new ones too, its fun to pick them out...I know its just diapers and that you end up just throwing them away but I love them for more than just their design ( that's just the added bonus!) Hope has always been very sensitive, using Huggies brand diapers has caused her bum to become quite dry and chapped and sometimes would result in a rash. After trying a few different "normal" brands nothing seemed to help even when I applied lotion. I tried many "organic" brand diapers but was very disappointed to find most were really scratchy and and non absorbent, so I finally broke down and ordered some of the Honest company. I have fallen in love, I didn't know someone could love diapers, but its true! They are extremely soft inside, really absorbent( Never have had a leak, unless it was me being a silly mom and not putting them on correctly) and they fit her to a T! Plus did I mention they are cute ;) !
     The fact that I don't have to worry about her cute tushy is awesome! Some people complain they are to expensive or that they would rather use cloth and here's what I have to say to that... first after doing the math and looking at how much regular diapers or sensitive diapers would cost me, there really is not much of a big price difference and paying a few extra dollars for them has never been a huge deal when we budget it out and there have been times when I have cut back on other things ( i.e.: clothes, toys, and whatever else non necessity items for that month) but I would be doing that for diapers anyways, and we don't have an in unit washer and dryer...so cloth diapering was out of the picture for us, plus I don't know if I am strong enough for that  ha ha!
Honest Diapers- DOUBLE YAY! 
    - Now to the wipes, as you can see I don't have a picture...that's because I haven't been that impressed. I loved that they were natural and free from a lot of chemicals that other wipes have but I feel like they didn't really "do their job" if you know what I mean. Felt like I had to use a ton to get the job done...but that being said I have heard they have improved them I just haven't ordered to re-try yet.

     - The body wash and shampoo is one of my favorite products! the scent is "sweet orange vanilla" but to be honest its very faint, but I like that. I love this wash because its the only one that doesn't dry her skin out. I have found that Johnson and Johnsons and even Burts Bees wash reek havoc on her little eczema patches. It bubbles really well and as a bonus they have a giant two pack of this goodness at Costco!
Body wash and Shampoo: Yay!

- The Honest Company hand soap is also a great product. I wish it came in some more fun scents but I like using this knowing that there is no harsh chemicals and it leaves my hands still soft. Hope is REALLY into chewing on our fingers and knuckles so its nice not to have to worry what was on my hands. Some say this is over the top, and I say yes I am over the top ha ha!
 Hand Soap: Yay! 

- The honest company lotion.  I love that is is vegan and plant based because I have found that a lot of products have soy in their lotions, which travels to your blood stream and you mine as well have eaten it...and soy is no bueno for my tummy or hopes...but in my opinion it doesn't do much for Hopes skin. I feel like I have to reapply  all day to give her any relief. I have found some others that work better and I like their " Healing balm" better as lotion ( not pictured I am all out :) but it is good stuff! )  It works great on my face though!

     -Honest company soothing bottom wash is AWESOME! I spray it every time I change Hopes diaper. It really helps reduce the redness and she seems to like the cooling effect. I used it on my dry hands the other day and loved it also. Has aloe in it so it helps heal any chapped dry or rashy skin. Other bonus- it has a light vanilla scent! Love this product.
Soothing Bottom Wash- Double YAY!

-Honest organic baby powder is also pretty great. Doesn't seem not to much different than regular talc free powder but it is ! It has probiotics in it, to help balance the ph, it also has aloe and arrowroot powder which helps kill bacteria. It doesn't have any kind of smell, which I sort of like and sort of miss the baby powder smell...but with all the other good things about it I think I can let that go :)
-Organic Baby Powder- yah!!

-The diaper cream is so so. I like all the good things in it and how natural it compared to some other brands but I honestly didn't see much relief of her bum rash when using this. Also it seems a little more watery than other types so I feel like it doesn't create as great of a barrier as other brands. Its nice to not have to use sandpaper to get it off your fingers like the other insanely sticky brands!
-Diaper cream- eh..
- The honest company cleaning products are the bomb! Seriously, I have never been disappointed in any of their cleaning supplies! They work SO good and never cease to impress me! Plus they all smell so good! The stain remover got rid of some carpet stains that have been there quite a long time! The bathroom cleaner got rid of our soap scum in the shower no problem! The multi surface I use all the time and leaves the house smelling fresh! The floor cleaner has a light herb scent that I love in the kitchen! Cant go wrong with any of these or their other cleaning supplies!
Honest cleaning Products- yah yah yah yah!

- The Honest Bug spray is a good find. I HATE bug spray I feel so nasty after I use it but with honest company bug spray its not as bad. Plus It uses all natural essential oils so I feel safe spraying it around Hope, which is great because the mosquitoes are a bitin' right now! It still has a smell but its not as heavy and unnatural smelling as the other types so I don't mind it. It seems to really repel the bugs too!
-Bug Spray- yay!

-Honest Company Sunscreen has its pros and cons in my book. It is very non greasy and I love that its natural and safe to use on hopes sweet face and body and that it doesn't give her any kind of rash or reaction. Cons, its only spf 30 so I feel like if we were really in the sun it wouldn't be that protective and you have reapply quite often.
- Sunscreen- ehhh...
Overall I am pretty impressed with the Honest company. I love that all their products are safe and non toxic and that I don't have to ever worry about any of them around my little love.  I would encourage you to give them a try! You can get a free trial online ( You will then have to call and cancel your subscription after or you will be signed up for the monthly deal.. BUT  honestly its not a big deal. They are probably some of the nicest costumer service I have ever spoken too! I actually kind of enjoy calling them haha!) Buy Buy Baby is also now supplying some of their products and diapers so stop on in an try some! You won't be disappointed! Most products are worth every penny and work better than the leading baby brands!  PLUS some of the proceeds from each purchase goes to help supply families in need with baby products! Awesome! "Your doing ok mom.."

     As a new mommy everything is a learning process. You have this extreme desire to do what is best and right for your child but you sometimes feel like you have no idea what your doing or how to make that decision. Everything is an uphill climb but once you get on the other side you feel like a pro. Putting on a diaper, giving the wiggle monster a bath without getting soap in theirs eyes and their nose, swaddling, naps...they all use to be so overwhelming and scary to me, now I'm a "pro" ( I say that very lightly lol ) We as moms have to make such difficult decisions, vaccinate or not vaccinate?, let cry it out or not cry it out, call the doctor or wait it out?Not to mention everybody has an opinion. Its hard being in charge of someones life, especially one you care about SO deeply and only want to best for...but heres the thing, you are doing it mommy and your doing it great! 
   You are a rockstar, and you know whats best for your babe. Don't let that mommy intuition escape you. How you raise your babe is what is best! Good job mom.

     Welcome to my blog! I wanted to introduce myself and explain why I started blogging!
My name is Kristen Carvajal, I am 21 years old and I am one blessed lady! I have an amazing hubby of 2 years and counting and just this year we have been blessed with a bundle of joy Hope Elliana.  If you were to travel back in time and ask me where I would be at 21 years old, it would be no where near where I am now. I would probably would say " traveling, building orphanages in africa, setting the world on fire!" But the amazing thing is, now that I am here I wouldn't change it  for anything. It was like God knew where  I truly belonged and where my true life changing role would take place.
    When Hope was first born, she was the most chill baby I have ever known, that is until week 5 hit. All the sudden all sorts of crazy broke loose. She would scream cry every feeding, spit up like nobodies business and clench up in such pain when her tummy was full. Everyone reassured me it was just colic, but after blood starting showing up in her stool ( Sorry I know, tmi right?) I knew something deeper was going on. After researching and hearing from others who went through similar situations, I realized Hope had a milk protein and soy allergy and that  I would need to cut anything containing any of those things out of my diet.
    Now let me tell you something, you never realize how much you seriously love that string cheese until its staring you in the face and you know you can't have it. When I first had to "purge" my kitchen I remember feeling SO overwhelmed..."what was I going to eat!?" and more importantly " How was it going to taste any good!" ...so after throwing myself a total pitty party I decided that I was going to do this and I was going to ROCK IT.
   We as a family also decided to cut out gluten, and after much startling research we realized we wanted to cut out any genetically modified food, and non organic.  ( I know I know, there is a ton of crazy people getting all up in your business about this stuff already) But I challenge you to start doing your own research and see what you find. ( I recommend watching " Food Inc" on netflix also) Once I learned the truth about what I as putting in my body, and especially my families body I couldn't go back.
     Heres the thing, we like many of of you are on  a VERY tight budget..and from what I had known eating this kind of lifestyle was EXPENSIVE!..but  I  was determined and after learning some tricks and really putting this plan in place let me tell you, its totally doable! Seriously though it is! I feel like we have been so trained to assume that if you don't have a large grocery budget don't bother, but its so not true! We have been completely allergy free, gmo free, and all organic for 2 months now and have been full and satisfied. We have never felt better and I have a new passion for this lifestyle and sharing with others how they can achieve this for their families, hence the blog. Its my goal to share some tips, tricks, recipes, and more as I'm learning  this new lifestyle.
